Chicken Satay

Ingredients
- 1 x 440g packet Wokka Golden Hokkien Noodles
- 500g chicken mince
- 2 golden shallots, finely chopped
- 2 teaspoons minced garlic
- 1/4 cup crunchy peanut butter
- 1 small bird’s eye red chilli (seeds removed), thinly sliced
- 1/3 cup chopped fresh coriander
- 2 teaspoons fish sauce
- 2 teaspoons lime juice
- 3 baby cucumbers, sliced
- coriander leaves, to serve
- 2 tablespoons roasted salted peanuts, chopped
Instructions
- Step 1 -Soak noodles in boiling water for 2-3 minutes to soften. Drain and set aside.
- Step 2 -Heat oil in a large frying pan over medium-high heat. Add chicken mince and cook until browned. Add shallots, garlic and ginger and cook over 1-2 minutes or until fragrant. Reduce heat to medium, stir in peanut butter and ó cup water and cook for a further 5 minutes or until thickened. Stir in chilli, coriander, fish sauce and lime juice. Add noodles to pan and stir until heated through.
- Step 3 -Divide noodles amongst serving bowls and top with cucumber, coriander and chopped peanuts. Wokka Hints: If you like it hot, chop up some fresh red chilli and soften with the shallots, garlic and ginger.
Cooking Instructions
Toss your noodles straight in the wok or soak in boiling water for 2-3 minutes for a softer texture.
Store in a cool, dry place out of direct sunlight.
