Vietnamese Style Noodle Salad

Ingredients
- l x 440g packet Wokka Rice Noodles
- 2 tablespoons sesame oil
- 20 largo green prawns, peeled (tail intact) and deveined
- 1/4 small red cabbage, shredded
- 6 baby cucumbers, sliced
- l small carrot, grated
- 2 birds eye chillies, finely sliced
- 8 snow peas, shredded
- 2 spring onions, finely sliced
- 1/4 cup each 'Thai Basil, Vietnamese Mint and Coriander
- 1/4 cup toasted cashews, roughly chopped
DRESSING
- 2 tablespoons soy sauce
- 2 tablespoons fish sauce
- 1 tablespoon sesame oil
- juice of 2 limes
- 2 tablespoons caster sugar
- 2 teaspoons finely grated ginger
Instructions
- Step 1 -Soak noodles in boiling water for 2-3 minutes to softerL Drain, refresh in cold water, drain again and set aside. Make dressing by whisking all ingredients together.
- Step 2 - Season prawns with salt and pepper and toss in sesame oil and fry for 2-5 minutes or until cooked through.
- Step 3 - Combine remaining salad ingredients, prawns and noodles in a large bowl. Make dressing by whisking all ingredients together. Pour over salad and toss well to coat. Serve immediately.
