Thai Chicken Rice Noodle Bowl

Ingredients
- 440g Wokka Rice Noodles
- 500g Chicken thigh fillet
- 1 cup fresh coriander chopped
- 1 tbsp ginger, minced
- 1 tbsp garlic, minced
- 11⁄2 tbsp soy sauce
- 11⁄2 fish sauce
- 11⁄2 olive oil
- 11⁄2 brown sugar
- Salt and pepper
Salad Suggestions
- Grated carrot
- Edamame
- Mixed green leaves
- Cucumber
- Fresh mint
- Chilli
- Cabbage or sauerkraut
- Sprouts
- Snow Peas
Instructions
- Step 1 - In a small bowl combine coriander, ginger, garlic, soy sauce, fish sauce, olive oil & brown sugar.
- Step 2 - Add the chicken and marinate for 3 hours or overnight.
- Step 3 - Pre heat the grill to medium high heat. Grill the chicken about 3-4 minutes each side or until cooked throughout.
- Step 4 - Prepare noodles per pack instructions then run under cold water & drain. Serve with Wokka rice noodles and fresh herbs and salad.
