Street Style Singapore Noodles

Ingredients
- 300g Chicken thigh fillets, cut into strips
- 440g Wokka Singapore Style Noodles
- 2 eggs, beaten
- 1 tbsp curry powder
- 1 tsp turmeric
- 2 tsp chilli paste
- 2 garlic cloves, crushed
- 1 tbsp ginger, crushed
- 1 onion, sliced
- 1 bunch broccolini
- 1 bunch asparagus
- 1 cup red cabbage
- 1 cup wombok
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sugar
- 2 spring onions
- Crispy shallots
Instructions
- Step 1 - In a hot wok make an omelette (egg pancake) with the beaten eggs, then remove from heat a set aside
- Step 2 - Add the chicken to the hot wok and cook until it starts to colour. Add the curry powder, turmeric and coat the chicken. Add the onion and mix with the chicken until the onion softens. Add minced ginger, garlic & chilli paste and combine with chicken.
- Step 3 - Add coconut cream, soy sauce, rice vinegar, sugar, mix and let simmer. Then add your stir fry veggies. We used wombok, asparagus, broccolini & red cabbage. Cook the Wokka Noodles as per pack instructions and add to stir fry, coat noodles and add the egg back in and serve. Garnish with crispy shallots and spring onions.
