Beef with Black Bean Thin Egg Noodles

Ingredients
- 440g Wokka Thin Egg Noodles
- 500g rump steak strips
- 1 tbsp vegetable oil
- 3 tbsp cornstarch
- 1 tsp dark soy sauce
- 2 tbsp vegetable oil
- 1 medium white onion, sliced
- 1 bunch broccolini, sliced
- 200g snow peas, cut
- Sauce
- 1⁄4 cup OXO beef stock
- 3 tbsp black bean paste
- 2 tbsp rice wine vinegar
- 1 tbsp dark soy sauce
- 2 cloves garlic minced
- 2 tsp ginger paste
- 1 tsp sesame oil
Instructions
- Step 1 - Add beef to a bowl with vegetable oil, cornstarch and soy sauce. Stir to coat, marinate for 10 minutes.
- Step 2 - In a small bowl, whisk together beef stock, bean paste, vinegar, soy sauce, garlic, ginger and sesame oil. Set aside.
- Step 3 - Heat a wok over high heat. Once hot, add oil and stir fry the beef. Continue stir frying for 3 minutes, tossing occasionally until beef is no longer pink. Remove from wok and set aside.
- Step 4 - Add the onion and stir fry for 3 minutes. Add the broccoli and snow peas and cook for another 3 minutes.
- Step 5 - Add the sauce mixture and beef back to the wok and stir fry for 4 minutes. Add prepared Wokka noodles to wok and coat in sauce. Serve with toasted sesame seeds & chives.
