Pork Belly Udon Carbonara

Ingredients
- 1 pkt Wokka Udon Noodles
- 1/2 tbsp olive oil
- 250g pork belly cut into sections
- 1 brown onion
- 2 cloves garlic, crushed
- 250ml chicken stock
- 1 egg
- 1 cup cream
- 1 cup shredded or grated mild white cheese
- salt + pepper to taste
- Chives to garnish
Instructions
- Step 1 - Cook Wokka Udon per package directions, rinse + set aside.
- Step 2 - Heat a pan to medium to high & coat with olive oil, add pork belly in.
- Step 3 - Once the pork belly has browned add onion and garlic.
- Step 4 - Add chicken stock and simmer until liquid reduces. Then add cream & cheese.
- Step 5 - Add in cooked udon, mix in evenly.
- Step 6 - Remove from heat and plate. Add egg yolk on top and top with chives + cracked pepper.
- Step 7 - Mix the egg for a super, creamy, rich pasta!!
