Salmon & Green Vegetable Noodle Bowl

Ingredients
- 1 x 400g packet Wokka Wholegrain Noodles
- 2 tablespoons mirin
- 2 tablespoons soy sauce
- 1 teaspoon wasabi paste
- 300g hot smoked salmon, broken into chunks
- 1 cup podded edamame beans, defrosted
- 1 avocado, quartered
- 1 Lebanese cucumber, sliced
- 1/2 cup sprouts
Instructions
- Step 1 -Soak noodles in boiling water for 2-3 minutes to soften. Drain, refresh in cold water, drain again and set aside.
- Step 2 - Combine mirin, soy sauce and wasabi paste in a medium bowl and add noodles and toss to combine. Arrange noodles evenly between four serving bowls.
- Step 3 - Top with salmon, edamame beans, avocado, Lebanese cucumber and sprouts.
Wokka Hints:
Alternatively use smoked salmon slices or sashimi-grade raw salmon slices.
