Stir Fried Chicken with Chinese Cabbage and Thin Egg Noodles

Ingredients
- 440g pack WOKKA Thin Egg Noodles
- 2 tbsp sunflower oil
- 1 red onion, thinly sliced
- 3 cloves garlic, finely chopped
- 1 chilli, chopped
- 500g chicken mince
- ¼ cup fish sauce
- 1 ½ tbsp soy sauce
- 1 ½ tbsp caster sugar
- 1 ½ cups finely sliced chinese cabbage
- ¼ cup coriander, finely chopped
- ¼ cup peanuts, toasted
- Coriander, lime and additional chillies, to garnish
Instructions
- Step 1 - Soak the noodles in boiling water for 2-3 minutes to soften. Drain and set aside.
- Step 2 - Heat oil in a large frying pan. Cook onion, garlic and chilli for 1 minute until tender.
- Step 3 - Add chicken and cook over medium heat, whilst breaking up mince with a spatula until meat is just cooked. Add sauces, sugar, cabbage and coriander.
- Step 4 - Fold in noodles and serve garnished with peanuts, lime, coriander and additional chilli.
