Teriyaki Chicken & Vegetables with Udon Noodles

Ingredients
- 440g pack WOKKA Udon Noodles
- 2 tbsp sunflower oil
- 400g chicken breast, cut into 3cm dice
- 11⁄2 red capsicum, thinly slice
- 4 spring onions, cut into 3cm lengths
- 175g pack WOKKA Teriyaki Stir Fry Sauce
- Additional spring onions, for garnish
Instructions
- Step 1 - Soak the noodles in boiling water for 2-3 minutes to soften. Drain and set aside.
- Step 2 - Heat a little of the oil in a large frying pan or wok. Sear chicken cubes in batches until golden, set aside.
- Step 3 - Add remaining oil to the pan and cook the capsicum and spring onions for 1-2 minutes over high heat.
- Step 4 - Return chicken to the pan, with the noodles and stir fry sauce. Toss well until noodles have been heated through.
- Step 5 - Serve Teriyaki chicken and noodles garnished with spring onions.
A delicious Japanese dish.
