Teriyaki Chicken with Wholegrain Noodle Salad

Ingredients
- 2 chicken breast fillets
- 2 tbsp teriyaki sauce/marinade
- ¼ cup soy sauce
- 2 tbsp lime juice
- 2 tbsp mirin
- 1 tsp sesame oil
- 2 cloves garlic, finely chopped
- 440g pkt WOKKA Wholegrain Noodles
- 4 spring onions, sliced
- 1 lebanese cucumber, sliced
- Toasted sesame seeds, spring onion and chillies, for garnish
Instructions
- Step 1 - Combine chicken and teriyaki, cover and set aside refrigerated for at least 15 minutes.
- Step 2 - Meanwhile, combine the soy, lime, mirin, oil and garlic for the dressing.
- Step 3 - Pre-heat a lightly oiled frying pan and cook the chicken over a medium to low heat for 6-8 minutes each side or until cooked through. Turning regularly.
- Step 4 - Soak the noodles in boiling water for 2-3 minutes to soften. Drain and set aside.
- Step 4 - Toss together the dressing, noodles and spring onions. Divide between serving bowls and drizzle with any extra dressing. Slice chicken breasts and serve on noodles, garnished with cucumbers, sesame seeds, additional spring onion and fresh chillies.
